Chocolate Covered Pumpkin Balls. Moist pumpkin cake center, with cream cheese and covered with chocolate. Amazing snack recipe. Makes a perfect Holiday candy.

Chocolate Covered Pumpkin Balls

Ingredients

Cake:

  • 1 box white cake mix
  • 3/4 cup water
  • 2 eggs
  • 1/4 cup oil
  • 1 cup pumpkin
  • 2 tsp. pumpkin pie spice
  • 1 tsp. baking soda

Cream Cheese Mixture:

  • 1/2 cup butter softened to room temperature
  • 1 2 oz. cream cheese softened to room temperature
  • 1 1/2 cups powdered sugar
  • 1/2 tsp vanilla

Coating:

  • 1 pound package chocolate chips. Semi sweet or milk chocolate

Instructions

Cake:

  1. Mix all cake ingredients together with an electric mixer. Pour into a greased 9X13 inch pan and bake for 25 minutes at 350 F.
  2. Let the cake cool completely and then crumble all of the cake in a large mixing bowl. Make sure all of the cake is very finely crumbled before adding the cream cheese mixture.

Cream Cheese Mixture:

  1. Beat all ingredients together with an electric mixer until smooth and well combined. Add the mixture to the cooled cake crumbs and mix by hand until well combined with the cake crumbs.

  2. Place the mixture in the refrigerator for about 30 minutes. Once the mixture is chilled, roll into 1-inch balls and place on a wax-paper lined cookie sheet.
  3. Place the cookie sheet in the freezer for about an hour or two before dipping the cake balls into melted chocolate.

Coating:

  1. Place chocolate in a heatproof bowl and only microwave for 30 seconds at a time, stirring after each time. Once chocolate is looking almost melted with just a few lumps, don't microwave it again just stir the chocolate until it is completely smooth.
  2. Dip balls into chocolate coating. Add sprinkles if desired.
